Mike and Jodi Halker founded Due South Brewing Company in 2011. Although it wasn’t that long ago, there were very few breweries in Florida at the time. While the landscape for well-made craft beer continued to grow in the rest of America, Florida, and particularly South Florida, lagged behind. Recognizing the need for real independent beer in this area, the couple decided to open Due South in Boynton Beach.

After spending months changing various municipal codes in conjunction with city officials to allow an operating brewery within city limits, Due South finally found a home in a 15,000 square foot (1,394 square meter) warehouse in an industrial area around the corner from I-95. On May 12, 2012, Due South opened its doors to the public. Always focused on production, the location was nothing fancy, just a big open warehouse where people could have a beer next to the folks who were making it. The original seating plan called for thirty-two seats for taproom customers, but within a few months, it had grown to seating for over 160 as locals continued showing up to find out what real beer was all about.

Due South began to distribute in the South Florida area soon after opening, limiting distribution to just three counties. As the area’s first production-focused brewery, no one knew quite what to expect. All of the beer was produced on a fifteen-barrel brewhouse and capacity was limited to five fermenters under thirty barrels. Within two years, Due South would add six, sixty-barrel fermenters, increase production to almost 5,000 barrels per year, expand distribution from Key West to Jacksonville, and take home the Best Large Brewery award in the Best Florida Beer competition. And Due South continues to grow, most recently adding the 12,000 square foot (1,115 square meter) space next door to house a new taproom and increase its production area.

While Due South is known for its flagship beers Caramel Cream Ale and Category 3 IPA, the brewery typically produces between 60 and 100 beers per year, pushing boundaries with offerings such as Mexican Standoff (a robust porter with habanero chilies, bakers chocolate, and cinnamon) and Calling All Cars, a coffee and doughnut porter. Plus, accomplishments like pulling off a fifty-tap takeover in one night at the World of Beer in Wellington, Florida, prove the folks at Due South love what they do.

BARREL-AGED SCOTCH ALE

One Night in Ybor is a modification on a strong Scotch ale brewed to showcase the flavors of the classic Old Fashioned cocktail. Named after a particularly eventful evening in Tampa’s Ybor City area that involved a few of the brewers and a great deal of whiskey, bitters, oranges, and cherries, this beer was designed the next day on the three and a half hour van ride home from Ybor to Due South. With a Scotch ale already aging in Woodford Reserve bourbon barrels, the remaining ingredients were sourced: Bing cocktail cherries and fresh Florida orange peel zested right before adding.
